Slip slip slipping away

It's the last week of my summer vacation. They always goes by quickly, but this year takes the cake. First we had to work an extra two weeks in June to make up for a pandemic related late start that year, and now we're returning two weeks earlier than usual as we begin a new modified "year round" schedule. That cut the summer shorter than normal by a full month. 

So here I am in the middle of my last week of freedom, and every day I have that Sunday afternoon feeling deep inside. Just mild dread and anxiety that I'm trying my best to ignore. The days are ticking by fast but I'm hoping to do a couple more fun things before this week is out, things to take my mind off returning to work.

Here was my project this past weekend: salsa!





I had a ton of mixed tomato varieties that had come ripe all at once and needed to be used up. This salsa is so delicious that I might make another batch when/if I get another big harvest of tomatoes. Some of the plants are over seven feet tall now and most still have plenty of green fruit. This afternoon I plan to pickle and can some sliced jalapenos--my garden is still pumping out loads of peppers. 

If we get another hot and sunny day between now and Sunday, I may be able to go swimming at my friend's house. I'd like to spend a little more time in the sun this week, the vitamin D seems to boost my mood. Even if I don't go swimming, I'll try to spend plenty of time outdoors just the same.

Oh, and I have jury selection next Monday to look forward to--who knows, I may end up with jury duty and miss the first week of work altogether! That would be an interesting way to start the year. We shall see.

  1. What am I up to this week? Ah the same as every week now in my very late eighties - hairdresser early on a Thursday morning, otherwise dependent on callers and my carer. My carer always brightens my day and callers are always a nice surprise.

    1. I looked at a recipe online and just sort of winged it. The tomato varieties were: Brandywine, German Green, Red Beefsteak, and Mr. Stripey. That made a nice mix of red, pink, and yellow tomatoes. Then I added red and green jalapenos, a chopped purple onion, a diced red bell pepper that was going to waste in the fridge, minced garlic, the juice of one lime, a full cup of apple cider vinegar (to ensure it was acidic enough to can), salt, chili powder, and tomato paste. Cooked it down and voila! Salsa! It's sweet and delicious and a little bit hot. Not too hot though. Very nearly perfect.

    1. I love bread and butter pickles! And I envy you. For some reason my cucumbers have been a bust this year. I could buy plenty at the farmer's market but it just isn't the same!

    Did you ever get to talk to your principal about your work issues? I remember you wanted to talk to her before the school year got going again.

    1. I have not had a talk with the principal....yet. I'm saving that for after I get back to work and see how the year is shaping up. Hopefully the main person I had trouble with won't have been invited back this year, which will solve a lot of the troubles I had. But if she is back, then the talk will have to take place pronto.

  8. Too many typos in last reply - ha ha ! Here in the UK there is a heatwave so most people are not up to doing very much. Jane is caring daily for her mum who is at the end of life - which sort of puts things in perspective too. Meanwhile I am writing furiously - my equivalent of making salsa I guess. I am so lucky that work and life merge into one. Which means it all goes on, and you know, it's mostly good. Good luck in your new term.

  9. That salsa looks awesome and delicious. My wife makes her own pasta sauce among many other homemade delights, and it's so cool to know exactly what's in what we eat! Re: that Sunday afternoon feeling- I totally get that. Been having weeks worth of those lately. Enjoy what's left of your week of freedom the best you can.

    1. Hey, thanks for stopping by and leaving a comment! It really IS nice to know exactly what's in your food. To that end I'll be doing some baking this afternoon. Blueberry muffins with some fresh berries I bought, banana bread to use up overripe bananas, and pickled jalapeno slices with some of my bumper pepper crop.

  10. We just got home from a long weekend in Saluda with friends, sol this week is work some, relax at home some, and plan a trip to Oregon in September.
    And then I saw this post and now I need salsa!!

  14. I shall be interested to hear how you get on with the jury service. If you remember, I have also been called. I managed to change the date so that it isn't while I am looking after my friend's dog, so it isn't until the end of September now. I am hoping to plead old age and not be put on a lengthy case as I am 76 at the beginning of October, which is the age they can't call you !! ( you can be called if the start date is before your birthday though!)
    My tomatoes ( very few of them) are still little green marbles!
    It seems odd that you are already going back to school.....they only break up this week in UK!

  15. Mmmh, wonderful salsa, and homemade is always best, of course! Not sure if you know that I used to be part of an Italian family for 10 years (first husband was from Sicily) and spent every summer on the island. My mother-in-law, the grandmas and aunts always made sugo (same as salsa) which was utterly delicious, whether added as cold topping on roast bread (bruschetta) or hot with pasta or on pizza.

    Like you, I am aware of the last few days of freedom slipping away. It is wonderful here at the moment, summery but not too hot, and I think I want a walk by the river today. That particular path is crowded with people on bikes etc. on the weekend, but should be great today when most other folks are at work.

    1. Our weather isn't good for walks this week. It's not terribly hot, but it keeps raining just enough to make it really steamy with humidity. Starting tomorrow our air quality is supposed to be very bad, because believe it or not, the smoke from the wildfires along the West coast will reach South Carolina....over 3000 miles away! I'm afraid to ask how long it's going to go on.

  17. That salsa looks so good! I will think of you on Sunday night. The blues because summer is over. The worst Sunday night of the year I say. School starts for me on August 16th. Not looking forward to it.
