Scotch Eggs and Jellybeans

Happy Easter! I made Scotch eggs for part of our lunch today. This was my second attempt (ever) and they turned out great! I used panko crumbs for the breading and the exteriors have a nice crunch. With a couple of good quality mustards, they were a real treat!


And there was candy for dessert...

  2. Your Scotch Eggs look very professional. I was recently given one by my daughter-in-law which was an Avocado with an egg in the middle, and crumbed on the outside. It was nice, but I'd prefer one like yours!

  3. Those Scotch Eggs look great! My Mum loves panko crumbs, she says they are the best. Cadbury‘s cream eggs! I have not had anything Cadbury‘s since last summer in Yorkshire.

  4. I have yet to try a scotch egg, but they always intrigue me. Would you be willing to post your recipe, that yours look delicious.

    And God love you for eating a Cadbury egg. My teeth and stomach hurt just looking at them. They are way too sweet for me.

    1. I'll post the recipe later today, although there wasn't much to it! Cadbury eggs ARE really sweet. One or two is enough for me for the year!

  6. Well done with the scotch eggs Jennifer! I have never made any myself and you appear to have done a great job with yours. Did you use some sausage meat in the jackets?

    1. It's impossible to find scotch eggs in this part of the world so if you want to eat them, you have to make them. Yes, I used spicy sausage meat to encase the eggs!

    1. Thanks Rachel! I worried after I got them ready for frying, because I didn't consult a recipe until then, and all the recipes said to roll them in an egg wash, then plain flour, then breadcrumbs. I skipped all that and just rolled them in panko crumbs after encasing the eggs in sausage. They turned out fine even though I skipped those steps!
