Eating gluten free is getting old, and I still have at least two more weeks to go before I can say I've given it a fair shot. I've had to get creative when my resolve starts to waver. Making something new look appetizing helps a lot. This was dessert the other night, made with a gluten free graham cracker crust I found at the Food Lion down the road:
That's cheesecake flavor Jello pudding pie with fresh strawberries on top. It looks way better than it tasted!
The berries are out of season supermarket specimens that had very little taste. The pudding was okay, but I would have preferred plain vanilla or banana crème, since it seemed weird to have a cream cheese flavor without the true richness of cream cheese. You know? And the crust was okay taste wise, like a normal graham cracker crumb, but it didn't hold together well for slicing.
All in all, a really lackluster pie. It was pretty, though!
I bought a gluten free chocolate brownie mix to try tonight. I'm hoping it turns out better than the pie!

ReplyDeleteSadly, I don't think it's the reason for my skin issues. I thought I noticed some improvement at first, but then my period struck and I was as itchy as ever. Sigh. I want to have pretty skin on my knees and ankles again but I begin to despair.
DeleteI fear you may find that most gluten-free products taste a bit odd. I believe Pasta is the worst.
ReplyDeleteYou should try Kay's recipes for "Magic Cookies" and other gluten-free things; all her cooking and baking is gluten-free because of her husband. She's "Georgia Girl witn an English Heart" here in Blogland and often comments on my blog. I have her cookie recipe on my blog, too.
ReplyDeleteIt IS a nice-looking pie, for what that's worth! Dave is struggling a bit with the gluten-free thing, too. It takes a while to find suitable replacements for grain-containing favorites!

DeleteEvery Thursday I have to cook supper for our youngest son and his family, they are gluten free. This used to be very difficult but the market is getting tons more gluten free options now which makes cooking for them so much easier.
ReplyDeleteJennifer.... Trader Joes has a gluten bread that I eat all the time. Daughter's flat mate can not eat anything and they have this for bread. Small loaf in a green bag.
ReplyDeleteIt is Trader Joe's GLUTEN FREE Whole Grain Bread. It is somewhat chewy but it taste good.
Or at least to me. Most gluten free bread taste awful.

I found Pillowy Light Cloud Bread I do not know where I saw this it has no grains. She calls it a bread ? so before I tell anyone about it I want to make it.
